The most dynamic flavors and healthy dishes come from nourishing traditions and a seasonal inspiration based on sourcing local ingredients. As a chef, Jon collects ingredients with the best stories and weaves them together in the kitchen to tell a tale that will have everyone talking... or speechless!

 

Whether you are looking for a healthy vegetarian fare or high-protein local food, with quality meats, vegetable ferments, and grass-fed dairy Jon caters delicious and well balanced meals to large groups, weekly family meals, and individuals with busy schedules or specific dietary needs!

Raised on a small farm in Brown County, Indiana, Jon’s connection to real food culture has motivated and inspired him since he was a child.  His experience as a chef was ignited while working in top restaurants in Bloomington, IN, Including Tallent and Truffles.

 

Jon’s passion for food drew him out into the world, where he worked as a salmon fisher and prepared fresh meals for the crew every day. He traveled around the world several times, from South America to Southeast Asia, California to Hawaii, Europe, the Caribbean, and many places in between.  These travels always support his ongoing study of diverse foods and regional culture.

 

With a focus on fresh, local, and wild ingredients, he creates a dynamic connection sourcing many of the great cuisines of the world including; French, Mexican-American, Thai, Chinese, Japanese, Caribbean, and Italian.

Seven Ridges Eco Farm is a small family farm and permaculture garden in southwest Brown County, just about a mile from Lake Monroe. It is perched atop a wooded hill in the deep ravines and high ridges of the wildest area of Indiana.  It has been developed and maintained by the Kulow-Fessenbecker Family for over 35 years.  The Farm includes a large vegetable garden, two orchard plots, a plastic high tunnel, many bee hives and abundant access to the forest and all her bounties.

 

The philosophy at Seven Ridges is that of nature. From Observing nature and working with her, they strive to create a more holistic and balanced system of agriculture. They focus on the health of the soil by amending it with a full spectrum of essential trace minerals for the health of the plants and for maximum bioavailability in the people that eat these plants.  They never spray with synthetic chemicals or fertilizers! That would just deplete the soil in the long run, and it’s the long run they think about at Seven Ridges Eco Farm.

 

They grow a wide variety of vegetables and fruits, and are always experimenting with new, exotic, and/or heirloom varieties.  They grow substantial amounts of sweet potatoes, sweet corn, a large variety of hot peppers, tomatoes, herbs from around the world, and a dizzying variety of fruit including blueberries, strawberries, raspberries, apples, pears, cherries, melon berries, quince and more.  They process these colorful harvests into many things including krauts and pickled vegetables of many kinds, sauces, jams, hot sauce, pestos, teas, medicine, mead, pies and more.

PAD THAI

Wild Oyster Mushrooms or local chicken.  Served with spring rolls.

JAPANESE SOUL FOOD

Fried cauliflower and oyster mushrooms, with sweet potatoes, chili ginger, and nettle greens.

STONE BAKED PIZZA

Morels, ramps, and red buds.

SPRING SALAD

Local poached eggs, buttered ramps, fennel, and violets.

VENISON MOLE

Venison cutlet, homemade tortillas, with mole rojo.  Served with spiced cauliflower.

ACCRAS DE MORUE

Caribbean fried fish fritters from wild mackerel.  Served with sauce chien.

CHEESE AND MEAT BOARD

Humboldt Fog, maple chevre, gruyere, salame, with micro greens.

LOCAL EGGS

Asparagus and parmesean, served with duck fat fried sweet potatoes.

PRICING

Chef Jon will come to your house and prepare for you up to 5 meals to be refrigerated, frozen, or eaten fresh.  He shops from his local garden, farmers market, and local co-op grocery store to bring the best quality ingredients to your kitchen so you don’t have to.  He also leaves your kitchen cleaner than when He arrived.  Each meal is complete and comes with a side dish for optimal "yumtrition".  He can also help you host a dinner party!

Pricing is based on 5 meals for 5 people.  If you are one person, you still get this many meals that you can freeze individually or share with friends.  Meals are complete with a protein, vegetable, and staple. Of course, this is always open to culinary flexibility.  Consulations are always free!

Jon realizes that this plan might not fit all clients, and is willing to create a service customized to your specific needs and interests.

Add a side or desert for $30

Other add-on's are available, such as krauts and kimchis, granola, smoothie packs, raw chocolate truffles, and more!
